I'm cheating a tiny bit including this one in my list of new restaurants because I've eaten at a Cosme Kitchen here in Fukuoka; it used to be one of my favorite weekend lunch places. It was unfortunately replaced by a cheese tart store after a couple of years, and I've still never forgiven new place for moving in. Adaptation is a step up from what the Fukuoka Cosme Kitchen, which is why I'm including it here.
The focus at Cosme Kitchen's restaurants is veggies and vegetarian options. Meat is available (my friend had duck ragout), but there's a nice salad/veggie buffet you can add to your meal, and there's plenty of non-meat options. I had the mushroom gnocchi, which was good, particularly the mushrooms, the buffet, and hot cocoa after (which was more sweet than chocolatey, alas). The buffet is expensive, at 1296 yen, but the veggies were fresh, and various berries, seeds and salad dressings were available. I tried the miso-mayo dressing, which was tasty.
